Zeppole - cooking recipe

Ingredients
    2 c. flour
    1/4 tsp. salt
    3 tsp. baking powder
    1/4 tsp. mace
    2 eggs
    1/3 c. sugar
    1/2 c. milk
    fat for deep-frying
    confectioners sugar
Preparation
    Bring
    all
    ingredients
    to
    room
    temperature.
    Sift together the flour,
    salt,\tbaking\tpowder and mace.
    Beat the eggs with the sugar
    until well blended.
    Stir in the milk and combine with the
    flour
    mixture.
    Beat vigorously until quite smooth.
    Cover and let
    stand
    20 minutes.\tHeat 2 to 3 inches of fat to 370\u00b0 in
    a deep fryer or a large kettle or until fat is hot enough to brown
    a\t1 inch cube of bread in one minute. Using a spoon
    dipped in warm water slip a scant tablespoonful of dough, one at a
    time, into the fat.
    Fry Zeppole, a few at a
    time, about
    3 minutes or until golden.
    Zeppole will turn themselves as they cook.
    Remove with slotted spoon, drain on paper towel and roll in confectioners sugar.
