Golden Parsley Potatoes - cooking recipe

Ingredients
    1 lb. potatoes, cooked and sliced
    1 c. grated low-fat Cheddar cheese
    2 onions, sliced and sauteed
    2 eggs
    1 c. low-fat cottage cheese
    1 Tbsp. parsley
    salt and pepper
Preparation
    Layer potatoes, Cheddar and onions in casserole dish.
    In blender, mix cottage cheese, eggs, salt, pepper and parsley.
    Pour this over the potatoes. Bake at 350\u00b0 for 20 to 30 minutes.
    Top with fresh parsley.
