Charlotte Plummer Gumbo - cooking recipe

Ingredients
    1 c. margarine
    1/2 c. flour
    4 qt. water
    1 c. chopped green pepper
    1 c. chopped onion
    1 c. chopped celery
    1 Tbsp. garlic salt
    1 Tbsp. black pepper
    1 Tbsp. Lawry's seasoned salt
    2 large cans diced tomatoes
    2 lb. fresh or frozen cut okra
    2 lb. shrimp, peeled and deveined

Preparation
    In large pot, melt margarine until it foams; add flour and stir constantly over low heat until roux is light caramel color. Do not burn. Add remaining ingredients. Cook until all vegetables are soft and tender, approximately 45 minutes. Add shrimp. Continue cooking for 20 minutes. Remove from heat. Sprinkle with fil. Serve over hot fluffy rice in large bowl.
