Eggplant Grill - cooking recipe

Ingredients
    1 large eggplant, cut into 1/2 inch slices
    2 cloves garlic
    2 tsp. grated onions
    1 Tbsp. olive oil
Preparation
    Steam the eggplant for about 8 minutes or just until it begins to soften.
    While the eggplant steams, push the garlic through a garlic press, into a small bowl.
    Stir in the onions and oil until well mixed.
    Arrange the eggplant slices in one layer or on baking sheet coated with no-stick spray.
    Brush with half of the garlic mixture.
    Broil about 5 inches from the heat for about 5 minutes or until the slices begin to turn golden.
    Turn, brush with the remaining oil mixture and broil until golden brown.
    Serve hot. Makes 8 servings.
