Cheese-Topped Skillet Chicken - cooking recipe

Ingredients
    1 c. chopped onion
    1 clove minced garlic
    1 Tbsp. vegetable oil
    3/4 lb. chicken breast, cut into 1-inch pieces
    1 (14 1/2 oz.) can undrained, cut-up tomatoes
    1 c. rice
    1/2 c. cold water
    1 tsp. chili powder
    1/2 tsp. cumin
    1/2 tsp. hot pepper sauce
    1/2 tsp. salt
    1 c. reduced fat mild Cheddar cheese
    2 tsp. green onion, sliced
Preparation
    Saute onions and garlic in oil in 10-inch skillet.
    Stir in chicken, tomatoes, rice, water and spices.
    Bring to boil. Cover.
    Reduce heat.
    Simmer 20 to 25 minutes until rice is tender.
    Sprinkle with cheese and green onion.
    Cover until cheese is melted.
    Serves 4.
