Hogshead Cheese - cooking recipe

Ingredients
    1 hog's head
    4 pig feet
    4 pig ears
    3 lb. lean pork (country backbone)
    kosher salt
    black pepper
    crushed red pepper
    sage
    white distilled vinegar
Preparation
    Cut hog's head into 4 pieces; remove eyes, brains, and tissue.
    Put all meat into a large pot.
    Cover with water and boil until meat falls from bones.
    Remove meat and chop.
    Then season to taste with seasonings listed.
