Pumpkin Roll - cooking recipe

Ingredients
    3 eggs
    2/3 c. pumpkin
    1 c. sugar
    1 tsp. lemon juice
    3/4 c. flour
    1 tsp. baking powder (omit if using self-rising flour)
    2 tsp. cinnamon
    1 tsp. ginger
    1/2 tsp. nutmeg (1 tsp. if no ginger is used)
    1/2 tsp. salt
    1 c. chopped pecans
Preparation
    Beat eggs for 5 minutes. Add next 3 ingredients.
    Mix flour, baking powder, salt and spices.
    Fold into pumpkin mixture.
    Pour into greased and floured cookie sheet.
    Sprinkle with chopped nuts. Bake 15 minutes (no longer) at 375\u00b0.
    Cool 1/2 hour in pan. Empty on towel sprinkled heavily with powdered sugar.
    Sprinkle the other side of layer.
    Roll towel and cake together loosely. Let sit until completely cool.
