Crunchy Apple Rice Salad - cooking recipe

Ingredients
    1 c. uncooked long grain brown rice
    1/2 c. uncooked wild rice
    3 c. water
    1 Tbsp. sunflower or safflower oil
    2 Tbsp. ground cinnamon
    1/2 c. chopped apples
    1/4 c. chopped fresh parsley
    3/4 c. currants or raisins
Preparation
    Combine rices, water, oil and cinnamon in medium size saucepan over medium heat.
    Cook until water is absorbed, 15 to 20 minutes. Turn off heat and cover for 5 minutes.
    Put rice mixture in large salad bowl and toss in apples, parsley and currants.
    Serve hot or cold.
    Yield:
    2 servings.
    Heart healthy and low-fat.
