Grandpa'S Favorite Cornbread - cooking recipe

Ingredients
    1 1/4 c. buttermilk
    2 eggs
    1/4 c. vegetable oil
    2 Tbsp. thick/medium salsa
    1/2 c. self-rising yellow corn meal
    1 1/4 c. self-rising white corn meal
    1/4 c. biscuit mix
Preparation
    Preheat oven to 450\u00b0.
    Place 3 tablespoons of vegetable oil in an 8 or 9-inch cast-iron skillet and preheat skillet while preparing ingredients.
    Crack eggs into large mixing bowl and beat slightly; add buttermilk, 1/4 cup vegetable oil and salsa and mix well by hand.
    Add dry ingredients and stir until smooth.
    Pour into hot skillet and bake for 30 to 40 minutes or until golden brown.
    Serves 8.
