Potatoes In Sauce - cooking recipe

Ingredients
    1 Tbsp. fat (Crisco or bacon grease)
    1 medium onion, sliced
    1 tsp. chopped green pepper
    5 cold boiled potatoes (large)
    1 tsp. parsley
    salt and pepper to taste
    1 c. gravy or thick broth
Preparation
    Melt fat in a heavy pan and saute onion and green pepper.
    Do not brown.
    Slice potatoes in thick slices and add to onion.
    Add parsley, seasonings to taste and gravy or broth.
    Cover pan and simmer until most of the liquid has evaporated.
    Serves 4.
