Creamed Spinach Over Noodles(David'S Favorite) - cooking recipe

Ingredients
    2 lb. fresh or frozen spinach
    9 to 12 slices bacon
    6 Tbsp. flour
    3 c. milk (skim)
    1 Tbsp. chopped onion (I use 1 small onion)
    1 tsp. salt
    1/2 tsp. pepper
    medium egg noodles, cooked and drained
    1 to 2 c. shredded Cheddar cheese
Preparation
    Cook spinach (do not add water) 3 to 5 minutes.
    Drain spinach well.
    Squeeze in a towel, if necessary.
    Chop spinach and set aside.
    Cook bacon until crisp; crumble and set aside.
    Reserve half of the bacon drippings.
    Add flour to drippings.
    Cook over medium heat for 1 minute, until smooth (stir constantly). Gradually add milk; cook, stirring constantly, until thick and bubbly.
    Stir in chopped spinach, onion, salt and pepper; set aside.
    Arrange noodles on a serving platter; top with spinach mixture.
    Sprinkle with cheese and crumbled bacon.
    Serve immediately.
