Chicken And Barley Casserole - cooking recipe

Ingredients
    2 Tbsp. margarine or butter
    1 large onion, chopped
    2 cloves garlic, minced
    2 stalks celery, minced or chopped
    1/2 c. dry white wine
    1 (28 oz.) can tomatoes, chopped
    1 c. barley, rinsed
    3 c. chicken broth
    6 to 8 chicken breasts (no bone) or use legs and thighs without skin
    salt and pepper
Preparation
    Saute onion, garlic and celery in butter or oil on medium heat for 5 minutes.
    Add wine; bring to a boil and stir until wine evaporates.
    Add tomatoes, broth and barley; bring to a boil. Reduce heat, cover and cook 25 minutes, stirring occasionally. Add salt and pepper.
