Sue Frances Gander'S Florentine Manicotti - cooking recipe

Ingredients
    1 lb. ground beef
    1 Tbsp. margarine
    1/2 c. chopped onions
    1 clove garlic, minced
    2 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
    1 (16 oz.) carton cottage cheese
    1 c. (4 oz.) shredded Mozzarella cheese
    1/2 c. grated Parmesan cheese
    3 eggs, slightly beaten
    1 Tbsp. lemon juice
    1 tsp. salt
    dash of pepper
    12 large manicotti noodles, cooked and drained
    1 (16 oz.) jar spaghetti sauce
    additional grated Parmesan cheese
Preparation
    Brown ground beef, drain.
    Melt margarine in skillet.
    Add onion and garlic.
    Saute until tender.
    Combine ground beef, onion mixture, cooked spinach, cheese, beaten eggs, lemon juice and seasonings in a bowl.
    Mix well.
    Spoon meat mixture into cooked manicotti shells.
    Place shells in a lightly greased 13 x 9 x 2-inch baking pan. Pour spaghetti sauce on top.
    Sprinkle with additional Parmesan cheese.
    Bake at 350\u00b0 for 30 minutes.
    Yields about 6 servings.
