Tofu Egg Salad Sandwich - cooking recipe

Ingredients
    4 oz. firm tofu, drained
    1 1/2 tsp. tahini (see note)
    1 dill pickle, chopped (about 2 Tbsp.)
    1/4 tsp. minced onion
    1/2 tsp. prepared mustard
    1/2 tsp. vegetable oil
    1/4 tsp. turmeric
    pinch of basil
    pinch of celery seed
    4 slices whole grain bread
    salt to taste
    lettuce leaves
Preparation
    Crumble tofu into small pieces with a fork.
    Combine with tahini, pickle, onion, mustard, oil, turmeric, basil and celery seed.
    Divide filling in half.
    Makes 2 sandwiches.
