Cappuccino Parfaits - cooking recipe

Ingredients
    4 tsp. instant coffee
    1 Tbsp. hot water
    1 1/2 c. cold milk
    1 (4 serving size) pkg. vanilla or chocolate flavor sugar-free instant pudding and pie filling
    1/2 tsp. cinnamon
    1 c. whipped topping (lite)
    3 chocolate wafer cookies, crushed
Preparation
    Dissolve coffee in hot water in medium bowl. Add milk, pudding mix and cinnamon. Beat with wire whisk 2 minutes.
    Let stand 5 minutes or until thickened.
    Gently stir in whipped topping. Spoon half of the pudding mixture into 5 dessert dishes. Sprinkle with crushed cookies. Spoon remaining pudding mixture over crushed cookies. Garnish each serving with an additional 1 tablespoon lite whipped topping, if desired. Refrigerate until ready to serve. Makes 5 servings.
