Christmas Pecan Cake - cooking recipe

1 c. butter, softened
2 c. sugar
3 c. flour
1 Tbsp. baking powder
1 c. milk
1 tsp. vanilla
1 c. chopped pecans
1 can (3 1/2 oz.) flaked coconut
5 egg whites
pecan halves for garnish
candied cherries for garnish
cream cheese Icing
Preparation

Lightly grease and flour Bundt or tube pan.
Cream butter and 1 1/2 cups sugar until fluffy.
Combine flour and baking powder. Combine milk and vanilla.
Alternately add flour mixture and milk to creamed mixture, beating smoothly after adding.
Fold in nuts and coconut.
Beat egg whites until foamy; gradually beat in remaining 1/2 cup sugar until stiff, but not dry.
Fold whites gently into batter.
Pour into prepared pan.
Bake in 325\u00b0 oven for 1 hour and 30 minutes, or until wooden pick is withdrawn clean. Frost with cream cheese icing.
