Hoppin' John - cooking recipe

Ingredients
    1/4 lb. smoked ham hock
    6 c. water
    1 can peas
    2 c. uncooked long, grained rice
    1 c. chopped green pepper
    2 Tbsp. butter
    2 cloves garlic, minced
    1/2 tsp. salt
    1/2 tsp. pepper
    1 c. chopped tomatoes
Preparation
    Bring ham hock and water to a boil.
    Reduce heat.
    Cover and simmer 1 hour.
    Remove ham hock and cut meat from bone.
    Stir ham and remaining ingredients, except tomatoes, into water.
    Bring to a boil.
    Reduce heat, cover and simmer for about 20 minutes, or until rice and peas are tender, stirring occasionally.
    Add tomatoes and cook until hot.
