Pineapple Marshmallow Salad - cooking recipe
Ingredients

1 (No. 2) can crushed pineapple
1/4 c. sugar
1/2 tsp. salt
2 Tbsp. flour
1 egg
2 Tbsp. grated lemon peel
3/4 c. whipping cream
1/4 lb. marshmallows (small ones)
Preparation

Drain pineapple, reserving juice.
Combine sugar, salt and flour in saucepan.
Add egg; blend thoroughly.
Stir in pineapple juice,
cook, stirring constantly, until thick and smooth.
Remove from heat.
Add lemon juice and peel.
Cover and chill.
Whip the cream stiff and fold into pineapple mixture.
Fold in marshmallows and crushed pineapple.
If desired, 1/4 cup maraschino cherries may be added.
Serve in lettuce cups; garnish with watercress. Makes 6 servings.
