Scalloped Potatoes - cooking recipe

2 c. whipping cream
3 lb. red bliss potatoes, unpeeled and sliced thin
1 (5 oz.) pkg. Boursin cheese
1 1/2 Tbsp. chopped parsley
Preparation

Heat cheese and cream in saucepan until cheese is melted. Arrange half the potatoes in buttered 9 x 13 x 2-inch glass pan, overlapping the potatoes.
Pour half the cheese mixture over them. Arrange remaining potatoes and pour remainder of cheese over them. Bake at 400\u00b0 until golden brown, approximately 1 hour. Sprinkle with parsley.
