Ingredients

1/2 c. shortening
1/2 tsp. salt
1 tsp. vanilla
1 c. sugar
1 c. persimmon pulp
1/2 c. milk
1 tsp. cinnamon
2 eggs (unbeaten)
2 c. unsifted flour
2 1/2 tsp. double-acting baking powder
Preparation

Place shortening, salt and vanilla extract in mixing bowl. Beat at speed 5 until blended, about 30 seconds.
Add sugar, gradually continuing to beat, until thoroughly creamed, about 2 minutes.
Add eggs, one at a time, beating at speed 5 until well blended, about 1 1/2 minutes.
Sift together flour, cinnamon and baking powder.
