Tortellini Chicken Salad - cooking recipe
Ingredients

1/2 c. olive oil
1/3 c. wine vinegar
3 Tbsp. minced fresh basil leaves or 1/2 tsp. dried
salt and pepper to taste
1/4 lb. spinach tortellini, cooked and drained
1/4 lb. cheese tortellini, cooked and drained
2 c. diced cooked chicken breast
1 1/2 c. fresh cut up vegetables (such as broccoli, carrots and zucchini)
Preparation

In a large bowl, whisk together oil, vinegar, basil, salt and pepper until well blended.
Add tortellini, chicken and vegetables.
Toss to coat well.
Cover and refrigerate at least 2 hours to blend flavors.
Serves 4 to 6.
