Yam And Apple Bake - cooking recipe

Ingredients
    2 very large yams
    3 c. water
    3 large apples
    1 c. sugar
    1/2 tsp. lemon extract
    1/4 c. cornstarch
    1/2 c. margarine
    1/2 tsp. salt
    1 tsp. vanilla
    1/2 tsp. nutmeg
Preparation
    Peel yams after cooking.
    Steam 1/2-inch yam slices with 1 cup of water.
    Do not overcook.
    Cut apples in 1/2-inch slices.
    Mix sugar, cornstarch, 2 cups of water and margarine in a heavy pan until thick.
    Remove from heat.
    Add vanilla and lemon extract. In a 4-quart dish, layer potatoes, sauce, apples and sauce.
