Three Cheese Macaroni And Cheese - cooking recipe

Ingredients
    1 to 1-1/2 c. uncooked elbow macaroni
    1/4 c. butter
    1 sm. onion
    1/2 t. salt
    1/4 t. pepper
    1/4 c. all-purpose flour
    1-3/4 c. milk
    8 oz. chedder cheese, shredded
    1 - 8 oz. cottage cheese
    6-8 slices American cheese
Preparation
    Cook macaroni as directed on box.
    Cook and stir butter, onion, salt and pepper over medium heat until onion is slightly tender. Blend in flour.
    Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
    Stir in milk. Heat to boiling, stirring constantly.
    Boil and stir 1 minute; remove from heat.
    Stir in cheddar cheese until melted.
    Stir in cottage cheese and macaroni.
    Place in a casserole dish and top with American cheese slices.
    Cook uncovered at 350 degrees for 30 min., or until bubbly and cheese is melted and slightly brown on top.
