Harvest Soup(Cheap, Healthy And Delicious) - cooking recipe

vegetable oil cooking spray
1 lb. lean ground turkey
1 medium onion, chopped
1 tsp. dry oregano
1 tsp. Italian herb seasoning
3 large firm ripe tomatoes, chopped
3 large carrots, sliced
1 large potato, peeled and diced
6 c. beef broth
1 c. each tomato juice and dry red wine
1 Tbsp. Worcestershire
1/2 c. dry pasta shapes
1 tsp. liquid hot pepper
2 medium zucchini, diced
Preparation

Spray wide 4 to 5-quart pan with cooking spray.
Crumble turkey into pan; add onion, oregano and herb seasoning.
Cook over medium heat, stirring often, until turkey is no longer pink and onion is soft, but not brown (5 minutes).
Stir in tomatoes, carrots, potato, broth, tomato juice, wine and Worcestershire.
Increase heat to medium-high and bring to a boil; reduce heat.
Cover and boil gently for 20 minutes.
Add pasta.
Cover and cook 5 minutes. Add zucchini and boil gently, uncovered, until pasta is tender. Add pepper seasoning.
Makes 6 to 8 servings.
