Maryland Collard Greens - cooking recipe

Ingredients
    2 lb. collard greens
    1 ham hock or smoked meat
    1 tsp. crushed red pepper
    3 c. water
    salt and pepper
Preparation
    Combine water and ham hock in a large pot, boil for about 1 hour.
    Cut greens into 1/2-inch strips and wash thoroughly.
    Scald greens for 5 minutes in a pot of boiling water; drain the greens. Mix the greens, salt, pepper and red pepper with the ham hock. Cook 45 minutes or until tender.
