Shrimp Cakes - cooking recipe

Ingredients
    2 Tbsp. butter (unsalted)
    1 small onion, minced
    3 Tbsp. flour
    1 tsp. Dijon mustard
    1 c. light cream or half and half
    dash each: fresh ground pepper and salt
    1 lb. shrimp, cooked, shelled, deveined and chopped
    1 egg, beaten
    1 to 1 1/2 c. finely crushed cracker crumbs
    3/4 c. peanut or olive oil
    cocktail sauce or mayonnaise
Preparation
    Melt butter in a large saucepan.
    Add onion and cook over low heat until soft.
    Stir in flour, mustard, cream, salt and pepper. Stir until mixture is smooth and begins to thicken.
    Add shrimp and mix well.
    Put in a bowl; cover and refrigerate for 1 hour. After chilling, form into patties about 2 to 3 inches in diameter. Dip into beaten egg and then into cracker crumbs.
    Heat oil in a heavy skillet until sizzling.
    Fry patties until crispy on both sides.
    Drain on paper towels.
    Serve with sauce.
