Cracked Wheat Salad - cooking recipe

Ingredients
    4 c. water
    2 c. bulgur
    1 c. chopped pecans
    1 c. dried currants
    4 Tbsp. chopped Italian parsley
    1 Tbsp. best quality olive oil
    grated zest of 1 medium sized orange
    salt and freshly ground black pepper to taste
Preparation
    In a large saucepan, combine water and bulgur.
    Bring to boil, reduce heat and simmer, covered, for 20 minutes or until water is absorbed and bulgur is tender, but not mushy.
    Transfer to a bowl and refrigerate, uncovered, until cool.
    Add pecans, currants, parsley, olive oil, orange zest, salt and pepper to taste.
    Toss thoroughly.
    Serve cool or at room temperature. Serves 8.
