Spinach Quesadillas - cooking recipe

Ingredients
    1/4 c. chopped cilantro
    1 c. chopped onion
    2 Tbsp. chopped garlic
    1 Tbsp. olive oil
    salt and pepper to taste
    10 oz. pkg. frozen spinach, thawed, or 2 bunches fresh, cleaned and blanched
    1 c. shredded Monterey Jack cheese
    8 to 10 flour tortillas
    butter for grilling tortillas
Preparation
    Saute cilantro, onion and garlic in oil.
    Season with salt and pepper.
    Add spinach and cheese; heat until cheese is melted. Spoon 2 tablespoons of mixture onto flat of tortilla.
    Distribute evenly onto half of tortilla and fold in half.
    Repeat with remaining tortillas.
    Heat butter in medium skillet over medium heat.
    Grill filled tortillas on each side until brown.
    Serve immediately.
    Serves 8 to 10.
