Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    5 Tbsp. salt (pickling)
    2 1/2 c. sugar
    1 tsp. dry mustard
    2 tsp. turmeric
    1 green pepper, cut fine
    4 c. ground onions
    2 1/4 c. vinegar
    1 tsp. nutmeg
    2 tsp. celery seed
    1 Tbsp. cornstarch
    1 red pepper, cut fine
Preparation
    Combine zucchini, onions and salt.
    Let stand overnight. Drain and rinse well.
    Combine remaining ingredients.
    Simmer for thirty minutes.
    Seal while hot.
    Makes 7 pints.
