Rice Casserole - cooking recipe
Ingredients

1 c. short grain rice
4 Tbsp. butter
1/2 medium onion, minced
1 clove garlic, minced
1 3/4 c. chicken broth
1/2 c. beef broth
1/4 tsp. salt
1 c. finely diced zucchini
1 c. finely diced yellow summer squash
1/2 c. grated Parmesan cheese
3 Tbsp. lemon juice
1/4 tsp. cayenne pepper
Preparation

Melt 2 tablespoons butter in heavy saucepan.
Saute onion until soft, but not browned.
Add garlic; saute 1 minute, being careful not to burn.
Stir in rice.
Coat with butter mixture. Add broths, salt (if used) and pepper.
Cover.
Simmer for 15 minutes.
