Corn Dog Bites - cooking recipe
Ingredients

1 c. plain flour
2/3 c. cornmeal
1 Tbsp. sugar
1 1/2 tsp. baking powder
1 tsp. salt
2 Tbsp. bacon drippings
1 egg, beaten
1 to 1 1/4 c. buttermilk
1/2 tsp. baking soda
1 lb. franks
Preparation
-
Mix
together
flour, cornmeal, sugar, baking powder and salt. Add bacon drippings and egg.
Stir soda into buttermilk. Add
to first mixture for medium consistency.
Cut franks into 3/4\tinch pieces.
Insert
toothpick\tinto frank pieces.
Heat skillet, containing 2 inches of cooking oil, to medium temperature.\tDip each frank piece into bread mixture, then into oil, holding
by toothpick.\tDeep fry until lightly brown.
Dip out with
spatula onto paper towel to drain.\tMay serve with toothpicks
left
in bites
or
may
remove.
Serve
with a mustard relish.
Yields approximately 60.
