Eggplant Casserole - cooking recipe

Ingredients
    1 (1 lb.) eggplant, cut in 1/2 inch cubes
    1/2 tsp. alt
    1/2 c. chopped onion
    1/2 c. shredded Cheddar cheese
    2 beaten eggs
    dash of Tabasco
    pepper to taste
Preparation
    Cook eggplant in small amount of water.
    Simmer until tender; drain.
    Saute onion in small amount of margarine.
    Add all ingredients in 1 1/2-quart casserole.
    Sprinkle 2 tablespoons Parmesan cheese and paprika on top.
    Bake at 350\u00b0 for 30 minutes.
