Confetti Rice - cooking recipe

Ingredients
    2 bags yellow rice (saffron)
    1 red pepper, chopped
    1 green pepper, chopped
    1 tomato, chopped
    bread crumbs
    1 medium onion, chopped
    2 cans sliced mushrooms
Preparation
    Cook rice; follow directions on bag.
    Saute peppers and onion in small amount of olive oil.
    Add to chopped tomato.
    Toss with mushrooms, including juice.
    Add cooked rice; toss.
    Put in casserole dish; top with buttered bread crumbs.
    Bake until hot at 350\u00b0.
