Cheesy Cauliflower - cooking recipe

3 Tbsp. butter or margarine
3 Tbsp. all purpose flour
1 c. milk
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. (6 oz.) shredded sharp cheddar cheese, divided
5 (10 oz.) pkg. frozen cauliflower, cooked and drained
Preparation

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Remove from heat; stir in 1 c. cheese and set aside. Place cauliflower in a greased 2 1/2 qt. casserole. Pour cheese sauce over cauliflower. Sprinkle remaining 1/2 c. cheese over top. Bake at 350\u00b0 for 30 minutes.
