Black-Eyed Pea Salad - cooking recipe
Ingredients

1 c. dry black-eyed peas
1/4 c. red onion, diced
1 clove garlic, minced
1/4 c. green pepper, diced
1 1/2 tsp. basil
pinch of cayenne
lemon juice to taste
1 tsp. olive oil
salt to taste
Preparation
-
Place peas in boiling water.
Cook 20 minutes on medium heat. Remove from stove and drain.
Add other ingredients and chill. Serve plain or stuff in Pita Bread.
