Shrimp Creole - cooking recipe

Ingredients
    4 lb. shrimp, cleaned
    3/4 c. salad oil
    3 Tbsp. flour
    1 large onion or 1 bunch green onions
    12 oz. can tomato paste
    4 green peppers
    2 tsp. salt
    2 tsp. black pepper
Preparation
    Boil shrimp 5 minutes, saving stock.
    Make roux by heating oil and mixing in flour, stirring constantly, until well browned.
    Add onion and brown slightly.
    Add shrimp, salt and pepper.
    Stir until shrimp are coated with roux and none of the onion and roux sticks to the skillet.
    Add tomato paste and green peppers.
    Stir 10 minutes over moderate heat.
    Pour in 2 cups hot shrimp stock. Stir.
    Cook slowly for 1 to 1 1/2 hours.
    Serves 10 to 12.
    Serve over rice.
