Harvard Beets - cooking recipe

Ingredients
    1 can diced or sliced beets
    1/2 c. sugar
    2 Tbsp. flour
    1/4 c. water
    1/2 c. vinegar
    1/2 tsp. salt
    2 Tbsp. butter
Preparation
    Rinse beans; add them to boiling water and boil in a covered pan for 3 minutes.
    Let stand 2 hours.
    Pour off the water; add new water at room temperature to just cover the beans.
    After 2 hours, pour this water off.
    Add more water and let soak overnight.
    Rinse again in room temperature water (researchers say 5 times, but
    2 or 3 is enough).
    Then add water to cover and cook until done, about 75 to 90 minutes.
