Tomato And Zucchini Gratin - cooking recipe

Ingredients
    1 large onion, thinly sliced
    1 Tbsp. olive oil
    1 lb. zucchini, thinly sliced
    1/4 tsp. dried thyme
    1/4 tsp. dried basil
    1 large tomato, thinly sliced
    1/4 c. grated Parmesan cheese
    3 c. cooked rice
Preparation
    In a large frying pan over medium heat, saute the onion in the oil for 2 minutes.
    Add the zucchini; saute until tender, about 4 minutes.
    Stir in the thyme and basil.
    Remove from the heat. Coat a 1 1/2-quart casserole with nonstick spray.
    Layer half of the rice in the dish.
    Top with 1/2 of the zucchini and 1/2 of the tomatoes.
    Sprinkle with 1/2 of the cheese.
    Repeat.
    Bake at 350\u00b0 for 15 minutes, or until heated through and lightly browned.
