Weight Watchers Polenta Parmesan - cooking recipe
Ingredients

2 1/4 oz. uncooked instant polenta (quick cooking yellow corn meal)
3/4 oz. Parmesan cheese
1 tsp. margarine
1/8 tsp. garlic powder
1/2 c. tomato sauce
1 1/2 oz. part-skim Mozzarella cheese, shredded
Preparation

In 1 1/2-quart saucepan, bring 1 1/2 cups water to full boil. Stir in polenta, Parmesan cheese, margarine and garlic powder. Reduce heat to medium and cook, stirring constantly for 4 minutes. Spray 8-inch flameproof pie plate with nonstick cooking spray. Pour polenta mixture into pie pan.
Preheat broiler.
Pour tomato sauce over polenta mixture.
Sprinkle with Mozzarella cheese. Broil until cheese is golden, about 2 minutes.
