Grated Zucchini - cooking recipe

Ingredients
    10 to 12 coarsely grated zucchini
    salt
    1 Tbsp. butter
    3/4 c. chopped shallots (onions)
    1 to 2 minced garlic
    1 1/2 tsp. chopped parsley (for garnish)
Preparation
    Place grated zucchini in bowl; salt well and let stand 20 minutes to 1/2 hour.
    Rinse and pat dry lightly.
    Saute shallots and garlic in butter until shallots are translucent and tender. Add zucchini and mix and cook in shallow pan until zucchini is tender.
    Garnish with parsley.
