Christmas Carrot Cake - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    1 c. oil
    2 jars Junior carrots
    1/2 c. raisins
    1 c. chopped nuts
    2 tsp. cinnamon
    1/4 to 1/2 c. candied cherries
    8 oz. can crushed pineapple, undrained
    2 c. flour
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Grease and flour a 10-inch tube pan. Beat eggs and sugar until light; add oil.
    Blend flour, soda, salt and cinnamon into egg mixture and blend well.
    Add nuts, fruit and carrots.
    Mix well.
    Pour into pan; bake for about 1 hour.
    Test to make sure it isn't wet.
    If wet, continue baking until toothpick comes out clean.
    Remove from pan, cool.
