Make-Ahead Mexican Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1 large onion, chopped
    1 (10 oz.) can tomatoes with green chiles (Ro-Tel)
    1 (10 oz.) can cream of mushroom soup, undiluted
    1 (10 oz.) can cream of chicken soup, undiluted
    1 (10 oz.) can enchilada sauce
    2 doz. corn tortillas, cut in eighths
    2 c. shredded Cheddar cheese
Preparation
    Saute ground beef and onion until browned, stirring to crumble; drain.
    Stir in remaining ingredients except tortillas and cheese. Alternate layers of meat mixture and tortillas, beginning and ending with meat mixture in a greased 13 x 9 x 2-inch pan.
    Sprinkle with cheese. Cook at 350\u00b0 for 35 minutes or cover with foil, seal securely, label and freeze.
