Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg
powdered sugar
6 oz. cream cheese
5 Tbsp. butter (softened)
1/2 tsp. vanilla
Preparation

Beat eggs on
medium for 5 minutes.
Add sugar, pumpkin and lemon juice
gradually.
Mix next 5 ingredients; fold into pumpkin mixture.
Line
pan
with
wax
paper.
Pour batter in pan; bake for 15 minutes.
(Don't overbake.)
Invert on towel; sprinkle with
powdered sugar.
Roll cake and towel together; cool completely.
Combine cream cheese, 1 cup powdered sugar, butter and vanilla.
Mix; spread on cake, reroll and refrigerate.
