Chicken Gumbo - cooking recipe
Ingredients

1 chicken
1 to 1 1/2 lb. smoked sausage
1/2 lb. Taso (smoked meat)
1 large onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
1/2 tsp. thyme
2 bay leaves
2 Tbsp. Worcestershire sauce
1 tsp. salt
1/8 tsp. pepper
1/2 to 1 tsp. parsley
5 or 6 green onions, cut up
1 c. flour
3/4 c. oil
Preparation

Boil chicken, sausage, Taso, chopped onion, bell pepper, garlic, thyme, bay leaves, Worcestershire sauce, salt and pepper until chicken is done.
Take chicken out and debone and set aside.
Put oil in skillet and add flour and brown, stirring constantly on medium heat.
When as brown as you want, pour into pot with juice that you cooked the chicken in.
Turn to high heat. When this starts to boil, turn to medium heat and add chicken, parsley and green onions and cook 15 to 20 minutes.
Serve hot over rice.
Sprinkle file (felay) over top.
