Hot Alaska Salmon Melts - cooking recipe

Ingredients
    1 (15 1/2 oz.) can Alaska salmon
    1/3 c. mayonnaise
    2 Tbsp. each: minced parsley and onion
    2 Tbsp. drained chopped pimento
    2 tsp. lemon juice
    dash of pepper
    3/4 c. shredded Cheddar cheese, divided
    8 slices bread or 4 English muffins
Preparation
    Drain salmon; break into large chunks.
    Add mayo, parsley, onion, pimento, lemon juice and pepper; toss gently to mix.
    Fold in 1/2 cup cheese.
    Spread about 1/4 cup mixture onto each slice of bread or onto muffins.
    Sprinkle with remaining cheese.
    Broil about 6 inches from heat until cheese melts and tops are golden (3 to 4 minutes).
    Makes 8 servings.
