Zucchini Casserole - cooking recipe

Ingredients
    1 1/2 lb. zucchini, cubed
    1 can cream of mushroom soup
    1/2 c. grated Cheddar cheese
    1/2 c. sour cream
    1 large grated carrot
    1 medium onion, chopped fine
    1 small bag Pepperidge Farm herb stuffing mix (use less)
    1 stick margarine or butter, melted
    pepper to taste
Preparation
    Cook zucchini about 5 minutes.
    Drain well.
    Add soup, grated cheese (reserve some for topping), carrot, onion, sour cream and spices.
    Add melted butter to stuffing mix.
    In a 9 x 12-inch pan, layer the zucchini mixture and stuffing mixture, ending with the stuffing mixture.
    Put remaining cheese on top.
    Bake uncovered for 30 minutes in a 350\u00b0 oven.
