Potato Cakes - cooking recipe
Ingredients

1 c. mashed potatoes
1/2 c. flour
1 egg
2 Tbsp. shortening
Preparation

Melt shortening in an iron skillet.
Mix the potatoes, egg and flour. Shape into balls.
Place in hot shortening.
Flatten with a spatula and fry on both sides until brown.
For extra flavor, add 1 tablespoon minced onion to the potatoes and flour.
