Cinnamon - Raisin Muffins - cooking recipe

Ingredients
    1 1/4 c. all-purpose flour
    1/2 c. regular, quick or instant Cream of Wheat cereal
    1/2 c. sugar
    1 Tbsp. baking powder
    2 tsp. ground cinnamon
    1 c. milk
    1 egg, lightly beaten
    2 Tbsp. margarine, melted
    1 tsp. vanilla extract
    1 c. raisins
    2 Tbsp. fruit juice (any flavor)
Preparation
    In medium bowl, combine flour, cereal, 1/4 cup sugar, baking powder and cinnamon; set aside.
    In small bowl, combine milk, egg, margarine and vanilla.
    Stir into dry ingredients just until moistened.
    Stir in raisins.
    Spoon mixture evenly into 12 greased 2 1/2-inch muffin pan cups.
    Bake at 400\u00b0 for 18 to 20 minutes or until toothpick inserted in center comes out clean.
    Remove from pan.
    Brush tops of muffins with fruit juice and roll in remaining sugar.
    Serve warm.
