Swiss Steak - cooking recipe

Ingredients
    3 Tbsp. all-purpose flour
    1 tsp. dry mustard
    1/2 tsp. salt
    1 1/2 lb. beef boneless round steak (about 3/4-inch thick)
    2 Tbsp. vegetable oil
    1 (16 oz.) can whole tomatoes (undrained)
    2 cloves garlic, finely chopped
    1 c. water
    1 large onion, sliced
    1 large green pepper, sliced
Preparation
    Mix flour, mustard and salt.
    Sprinkle one side of beef boneless round steak with half of the flour mixture; pound in. Turn beef and pound in remaining flour mixture.
    Cut beef into 6 serving pieces.
    Heat oil in 10-inch skillet until hot.
    Cook beef in oil over medium heat, turning once, until brown, about 15 minutes.
    Add tomatoes and garlic; break up tomatoes.
    Heat to boiling; reduce heat.
    Cover and simmer until beef is tender, about 1 1/4 hours.
    Add water, onion and green pepper.
    Heat to boiling; reduce heat.
    Cover and simmer until vegetables are tender, 5 to 8 minutes.
    Makes 6 servings; 270 calories per serving.
