Scalloped Eggplant (Casserole) - cooking recipe

Ingredients
    1 eggplant, peeled and diced
    1/2 stick margarine
    2 c. milk
    2 eggs
    1/2 green pepper, chopped
    1 tsp. chopped pimento
    1 small onion, chopped
    1 c. bread crumbs
    1 c. crushed Ritz crackers
    6 oz. Parmesan cheese
    salt and pepper to taste
    2 c. grated Cheddar cheese
Preparation
    Boil eggplant until tender.
    Drain and mash.
    Add margarine; set aside.
    Beat eggs and combine with remaining ingredients, except cheese.
    Mix in eggplant and pour mixture into a buttered baking dish.
    Cover top with cheese.
    Bake at 350\u00b0 for 30 minutes or until brown.
